One small area of the business that we rarely shine a light on (but really we should) is our offering of butchery classes for customers.
People often comment when they come into either Angel, Waterloo or Camberwell, that they wish they could wield a boning knife as deftly as one of our butchers. And yes, the wizardry of witnessing sharpened steel flash before your eyes can be both entrancing and unnerving at the same time.
But you do have to remember that behind the counter, the combined history of experience can amount to up to 100 years - especially when you consider Tony, our manager at EC1!
That said, a little bit of knowledge does go a long way and if you’ve ever considered having a crack on the block, our classes will put you in good stead and allow you to apply a little bit of magic in the kitchen at home.
Furthermore, if you are looking for a gift for someone special, who happens to enjoy meat and would LOVE to get some skills under their belt, the two sessions that we do currently offer at Turner & George would indeed make for an excellent present.
Christmas is around the corner after all (ahem).
THE BEEF BUTCHERY CLASS
The Original and dare we say it, the best, this is an intimate class held over at EC1 for up to a maximum of four people.
A whole fore rib of beef is on the agenda for this one and using a host of techniques, including some seam butchery, with the help of one of our butchers, each student will steadily break it down into steaks and roasting joints over a 90 minute period.
This really is a proper hands-on experience and each student gets to reap the rewards of their efforts but taking a huge amount of beef home with them.
We hold these classes on the last Thursday of every month and we will contact the owner of the gift voucher to get booked in for the most convenient session.

THE POULTRY BUTCHERY CLASS
This is a newer class that was launched with great success in early November and the name of the game here is to get all educational with some 101 butchery, but to also enjoy a convivial experience with the team. And yes, to eat some delicious food and drink some fine wine with us afterwards.
These classes are slightly larger going up to 10 people, to encourage a social atmosphere and they are held at Greensmiths, our partner site at Waterloo, SE1.
Again, every student gets to take away the love of their labour and their very own knife at the end of the class.
That is after eating some succulent roast chicken, seasonal vegetables and side dishes, and having a glass of Beausoleil Blanc from St John - a fresh and floral drop that goes very well with poultry dishes.
Just don’t leave your T&G jute bag on the bus on the way home.

WINE & MEAT MASTERCLASS WITH VICTORIA SHARPLES
Speaking of wine though, do keep an eye out for our very informal sessions that we have over at EC1 with our resident wine expert, Victoria Sharples.
The onus here is to simply gather people into the store and taste some new wines that we regularly have coming into the shop and to pair them with some delicious cuts, grilled by the team at T&G.
Victoria will always make her selection of wine based on what works for the season but there is always some wriggle room for experimentation and to mix things up. The Gochujang sausage and St John Claret will forever go down in history as one of the best combinations we’ve tasted…so far.
We ran several nights over 2024 and we plan to hold some more in the New Year, so do pay attention to announcements coming out on our socials and our newsletter, as they are very popular and sell out quickly.
