Bread — The Foundation of BBQ Greatness
You need something sturdy, delicious, and worthy of mopping up all that spiced meat juice. Think slider buns, garlic naan, or anything that can hold its own on a plate full of flavour. Here’s a quick homemade naan recipe that’s perfect for BBQs — simple to make and even better straight off the grill.
Quick Garlic Naan
Ingredients:

300g bread flour

7g yeast

5g salt

5g sugar

1 tbsp melted butter

60g yogurt
-
130g water
Method:

Mix the water, yeast, and sugar, and let it sit for 10 minutes to activate.

Melt the butter.

In a bowl, combine the flour and salt.

Add all the other ingredients to the bowl and knead for 5 minutes until everything is incorporated. Let the dough rest for 10 minutes.

Knead again for another 5–10 minutes until you have a smooth dough ball.

Place the dough in a lightly oiled bowl, cover, and set aside for 2 hours or until it doubles in size.

Once doubled, divide the dough into 8 even balls. Let them rest for 1 more hour (or chill overnight in the fridge).

When ready to cook, roll out each ball on a lightly floured surface.

Place on the BBQ and grill until you see bubbles and char marks, then flip to cook both sides until puffed up.

Brush with garlic-infused butter and wrap in a towel to keep warm.
Bombay Buttered Potatoes

Boil the potatoes in salted water until just tender.

Using a heavy-bottomed pan (cast iron works well), heat a little olive oil directly on the BBQ over the coals.

Tomato & Watermelon Salad
