According to our great late meat hero Josh Ozersky...the Spinalis Dorsi...or Deckle is the juiciest and tastiest bit of the rib-eye and is the small cap that sits on top of the eye itself. Best grilled medium-rare and served a simple salad of rocket and Parmesan, dressed with lemon juice, olive oil, Maldon sea salt and fresh ground black pepper. Job done.
